In India, the word chai simply means tea; any tea and every tea. The warm satisfying combination of spices we in the West have come to think of as chai is actually masala chai which most often includes green cardamom, ginger, cinnamon, peppercorns, star anise, and cloves. No two chai blends are exactly the same and masala blends vary regionally. This 5000 year old blend of spices is a traditional healing remedy in Ayurvedic medicine, but it was the British who influenced the addition of black tea, cream, and sugar to create the drink we are familiar with.
Of course, chai isn't just mind-blowing delicious, it has plenty of health benefits as well. The traditional masala spices promote digestion and warm the body. My chai blend contains red rooibos (pronounced ROY-boss) which is caffeine-free so can be enjoyed all day long.
